Ok. You had me at the combination of chicken, avocado and mango! I’ve made this various ways, both with and without the chicken, and it is always refreshingly delicious.
Ingredients:
- mango
- avocado
- red onion
- cilantro
- olive oil
- lime juice
- salt
Possible additions:
- red leaf or romaine lettuce
- shredded, baked chicken
- cucumber
How to:
Chop the mango into bite sized pieces. Don’t know how to cut a mango? Check out http://www.mango.org/how-cut-mango (who knew mango’s had their own webpage?!)
Finely dice the red onion.
In general, it is a good idea to rinse and pat dry your cilantro before chopping it as it tends to harbor dirt that can ruin a dish. Once washed, chop the cilantro coarsely.
Cut the avocado into bite sized pieces and combine mango, avocado, onion and cilantro into a bowl.
Make the dressing by combining olive oil, lime juice and salt to your desired proportions. In this salad, I am a fan of more lime and salt than olive oil but that is just my personal preference.
Combine the chopped ingredients with the dressing, serve and enjoy!
Additions:
If you are adding in shredded chicken, cucumber and/orĀ lettuce, that can be done prior to dressing the salad. I have been known to leave the lettuce out of this and instead, to use it like a tortilla. Simply place whole lettuce leaves on the plate, scoop in salad, roll and eat!
This salad is incredibly tasty and refreshing. With the chicken it can be a meal of its own and without, makes a great compliment to your meal.
