They may look like baby cabbages, however, Brussels sprouts deliver loads of heath benefits. The buds are rich in protein, dietary fiber, vitamins, minerals, and antioxidants.
Ingredients:
-1 lb Brussels sprouts
-2 cloves garlic
-Juice from 1/2 lemon
-Olive oil to taste
-Salt and pepper to taste
Directions:
Place oven rack at highest level in oven and preheat to 500 degrees on the broil setting. Line a baking sheet with parchment paper.
Trim 1 lb Brussels sprouts at their stems and cut in half, removing loose leaves. Toss Brussels sprouts in olive oil and lay out on baking sheet, cut-side down. Cook until outer leaves brown and inside is tender, 4-6 minutes. They cook fast!
Mince 2 cloves garlic and cook on stovetop over low heat in grape seed or olive oil for 1 minute until tender (or brown and crunchy if that’s what you prefer).
Combine garlic, Brussels sprouts, your tastiest olive oil, juice from half a lemon and salt and pepper to taste.
